Fit Thai Chicken Satay

Do u know this Thai snack called Satay?
It’s chicken skewers served with delicious peanut dip.
Here ofc recipe for a fit version of the dish!

I usually do the dish from 500g of chicken breasts. You’ll also need sticks for skewers.

You’ll need:

(For marinate)

  • 2 grated cloves of garlic
  • 3 cm of grated fresh ginger
  • juice squeezed out of half a lemon
  • 2 tablespoons of soy sauce
  • 1 teaspoon of ground coriander
  • 1 teaspoon of cumin
  • 1 teaspoon of curcumin
  • half a teaspoon of chilli
  • 3 tablespoons of sesame oil

(For peanut sauce)

  • a glass of coconut milk (250 ml)
  • 6 tablespoons of peanut butter
  • juice squeezed out of half a lemon
  • 1 tablespoon of soy sauce
  • half a teaspoon of ground coriander
  • half a teaspoon of cumin
  •  a pinch of chilli

Cut the cleaned chicken breast into long stripes. In the bowl prepare the marinade, by mixing all ingredients together. Add chopped meat. Marinate for a minimum 1 hour while keeping in the fridge.

The marinated meat stuffed with skewers. Grill on each side on the grill plate for 20 minutes or bake in the oven at 200 degrees (two sides, 10 min for each side).

In the meantime, we prepare a peanut sauce. Pour the coconut milk into a saucepan and heat it over low heat. Add peanut butter and mix thoroughly. Add all the remaining ingredients & mix it. Cook until the sauce thickens.

Put ready skewers on a plate. Serve the sauce in a separate bowl. Bon Appetit! 🙂
