Let me share with you some great Christmas recipes ideas!
All of them are 100% fit & clean! And super easy to do ๐Ÿ˜Œ๐Ÿ‘Œ๐Ÿผ

#1 Carrot Gingerbread

You’ll need:
โ„๏ธ 200g nuts (walnuts, almonds, hazelnuts)
โ„๏ธ 2 – 3 carrots
โ„๏ธ 2 spoons of gingerbread spice
โ„๏ธ 2 spoons of rice flour
โ„๏ธ 1 small spoon of baking powder
โ„๏ธ 4 eggs
โ„๏ธ 100g xylitol
โ„๏ธ Lemon peel & lemon juice

.. also for decoration:
โ„๏ธ Fresh or dried dates
โ„๏ธ 2 spoons of peanut butter
โ„๏ธ Coconut flakes

Preparation:
โ„๏ธ Grind nuts in a blender or grinder
โ„๏ธ Grate the carrots
โ„๏ธ Mix rice flour, gingerbread spice & baking powder in a bowl
โ„๏ธ Add grated carrots & nuts
โ„๏ธ Mash the yolks with xylitol, add lemon peel & few drops of lemon juice. Mix with the rest of ingredients
โ„๏ธ Beat egg whites until stiff. Add to the rest
โ„๏ธ The mass put into the mold. Bake at 180โ„ƒ for 45 min

Decoration:
I love to split gingerbread with dates creme. It’s very sweet & takes only a few minutes to be done. Just blend dates with peanut butter. Voila!

If you use dried dates, you should soak it in water until soft.

 

#2 Gingerbread Cookies

You’ll need:
โ„๏ธ 200g ground nuts (walnuts, almonds, hazelnuts)
โ„๏ธ 120g rice flour
โ„๏ธ 40g coconut flour
โ„๏ธ 1 whole egg & 1 yolk
โ„๏ธ 70g coconut oil
โ„๏ธ 100g honey
โ„๏ธ 2 spoons of xylitol
โ„๏ธ 2 spoons of gingerbread spice
โ„๏ธ 1 small spoon of baking soda

Preparation:
โ„๏ธ Mix rice flour, coconut flour & ground nuts in a bowl
โ„๏ธ Add xylitol, gingerbread spice & baking soda
โ„๏ธ Preheat coconut oil & mix with honey. Add to the rest of ingredients
โ„๏ธ Add yolks & egg white. Mix gently
โ„๏ธ Put the dough on the pastry board and roll it out
โ„๏ธ Cut the cookies
โ„๏ธ Bake in 180โ„ƒ for 8-10 minutes

 

#3ย Butterscotch Cones

You’ll need:
โ„๏ธ 7 rice waffles
โ„๏ธ 7 dates
โ„๏ธ 70g peanut butter
โ„๏ธ 20g coconut oil

Preparation:
โ„๏ธ Smash the rice waffles in a bowl
โ„๏ธ Blend dates with peanut butter (if dates are dries you should soak them first until soft)
โ„๏ธ Add coconut oil
โ„๏ธ Mix with rice waffles & form into balls
โ„๏ธ Keep in refrigerator for 2-3 hours

    Obviously, we can enjoy Christmas but in a healthy way haha. Those meals look extremely good.
