Let me share with you some great Christmas recipes ideas!
All of them are 100% fit & clean! And super easy to do πŸ˜ŒπŸ‘ŒπŸΌ

#1 Carrot Gingerbread

You’ll need:
❄️ 200g nuts (walnuts, almonds, hazelnuts)
❄️ 2 – 3 carrots
❄️ 2 spoons of gingerbread spice
❄️ 2 spoons of rice flour
❄️ 1 small spoon of baking powder
❄️ 4 eggs
❄️ 100g xylitol
❄️ Lemon peel & lemon juice

.. also for decoration:
❄️ Fresh or dried dates
❄️ 2 spoons of peanut butter
❄️ Coconut flakes

Preparation:
❄️ Grind nuts in a blender or grinder
❄️ Grate the carrots
❄️ Mix rice flour, gingerbread spice & baking powder in a bowl
❄️ Add grated carrots & nuts
❄️ Mash the yolks with xylitol, add lemon peel & few drops of lemon juice. Mix with the rest of ingredients
❄️ Beat egg whites until stiff. Add to the rest
❄️ The mass put into the mold. Bake at 180℃ for 45 min

Decoration:
I love to split gingerbread with dates creme. It’s very sweet & takes only a few minutes to be done. Just blend dates with peanut butter. Voila!

If you use dried dates, you should soak it in water until soft.

 

#2 Gingerbread Cookies

You’ll need:
❄️ 200g ground nuts (walnuts, almonds, hazelnuts)
❄️ 120g rice flour
❄️ 40g coconut flour
❄️ 1 whole egg & 1 yolk
❄️ 70g coconut oil
❄️ 100g honey
❄️ 2 spoons of xylitol
❄️ 2 spoons of gingerbread spice
❄️ 1 small spoon of baking soda

Preparation:
❄️ Mix rice flour, coconut flour & ground nuts in a bowl
❄️ Add xylitol, gingerbread spice & baking soda
❄️ Preheat coconut oil & mix with honey. Add to the rest of ingredients
❄️ Add yolks & egg white. Mix gently
❄️ Put the dough on the pastry board and roll it out
❄️ Cut the cookies
❄️ Bake in 180℃ for 8-10 minutes

 

#3Β Butterscotch Cones

You’ll need:
❄️ 7 rice waffles
❄️ 7 dates
❄️ 70g peanut butter
❄️ 20g coconut oil

Preparation:
❄️ Smash the rice waffles in a bowl
❄️ Blend dates with peanut butter (if dates are dries you should soak them first until soft)
❄️ Add coconut oil
❄️ Mix with rice waffles & form into balls
❄️ Keep in refrigerator for 2-3 hours

    Obviously, we can enjoy Christmas but in a healthy way haha. Those meals look extremely good.
